Banana Cake

I met my best friend Amy in college. We had a class together and a mutual friend. So basically we were destined to be together. I started going to visit her family in Texas within a few months of us becoming friends. I immediately fell in love with everyone and felt so at home. Her mother Carmen was everything I wanted to be when I grew up and had a family of my own. She is sweet. She is sassy. And she always has her hair done. Not long after Troy and I got married, he made his first trip down to Texas to meet all the Farmers. Basically his experience was the same as mine, love at first sight. Or maybe it was love at first bite…Carmen or Mimi as we all call her, made him a banana cake. It was the cake of his dreams. Banana, moist, banana, cream cheese frosting, banana…you get the idea.

After a few years of whining from Troy about banana cake or the lack there of in his life, I asked Mimi for her recipe. She told me that she just uses her favorite banana bread recipe and cream cheese frosting. Well I tried it. And it sucked. So I went back to Mimi and said no. I need your recipe. Well Mimi doesn’t use recipes. She just makes it!!!!!! But she thought she could tell me her cream cheese frosting recipe off the top of her head. With that recipe in hand and my friend Stinky’s amazing banana bread recipe, I created BANANA CAKE!!!!! Success was definitely sweet in this victory!

Banana Cake

Ingredients

Cake

1 cup sugar

½ cup oil

2 eggs

2 bananas

½ cup sour cream

1 tsp vanilla

1 ½ cup flour

1 tsp baking soda

½ tsp salt

Frosting

1 lb powdered sugar

1 cup softened butter

8 oz softened cream cheese

1 tsp vanilla

 

Cake Directions

Combine sugar, oil, eggs, and bananas into a bowl. Mix until thoroughly combined. Add sour cream and vanilla. Whisk until they are incorporated into the mixture.

Add dry ingredients to the mixture.

Put into a greased jelly roll pan and bake at 350 for 17 minutes.

Once cooled completely frost with cream cheese frosting.

Frosting Directions

Mix all ingredients with a hand mixer or in your kitchen aid until the mixture is completely mixed together. It will seem too dry at first, but it should come together once mixed. If not, add a little milk to get the proper consistency.
