Pumpkin Spice Donuts

Everyone loves a good holiday tradition, right?! Well apparently my sweet mother in law, Lucy, started a tradition when TL when he was a boy of making pumpkin donuts with orange frosting on Halloween. I have heard him make mention of this a few times over the years, but it was always to his mother trying to get her to make them. This year he told me that he really wanted Halloween Donuts on Halloween. It was cute and sweet and I couldn’t not make it happen.

So I called Lucy for the recipe she used. She searched through her recipes and couldn’t find it. Bummer. I then searched the internet. I found lots of ‘well those would work’ recipes until I found this magic recipe that just screamed at me, Make me! Make me! The only issue was the orange frosting part. But with a little tweaking we were able to come up with the perfect Halloween Donut aka Pumkin Spice Donut.

Pumpkin Spice Donuts

Ingredients

Vegetable oil, for frying

3 3/4 cups all-purpose flour

1 1/4 cups sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1 teaspoon salt

2 large eggs, lightly beaten

1 egg yolk

1/3 cup buttermilk

3/4 cup canned pumpkin puree

3 tablespoons melted salted butter

1/2 teaspoon almond extract

Glaze

3 cups confectioners’ sugar

1/2 cup milk

Orange food coloring

Directions

  1. Preheat oil in a large Dutch oven to 375 degrees F.
  2. Whisk dry ingredients together in a large bowl.
  3. Whisk eggs, yolk, buttermilk, pumpkin puree, melted butter and almond extract together in another large bowl until smooth. Add the wet ingredients to the dry and thoroughly mix together using a wooden spoon. The dough will be very sticky.
  4. Dust your countertop and hands with flour. Using your hands pat out dough to 1/2-inch thickness. Dip a 3-inch round cutter in flour and cut out donuts. Cut out center of donuts with 3/4-inch cutter. Gather scraps and re-roll. Continue cutting out donuts.
  5. Fry donuts, in hot oil, until golden brown and crisp, approximately 1 minute per side. Drain on wire rack over sheet tray to cool.
  6. Once cooled, dip completely in the glaze and then let sit until the glaze is dry.

Glaze:

  1. In a small bowl, combine confectioners’ sugar, orange food coloring and milk; stir well. Add additional milk, if needed, to reach desired consistency.
